This data was collected from healthy individuals in the Berkshire area aged 18-65. The aim of this study was to determine the effect of the food matrix on the prebiotic efficacy of inulin-type fructans. The study design was a 10-day, 4-arm, parallel, randomised trial involving 96 adults. Volunteers were evaluated for eligibility into the trial and if deemed acceptable were assigned into one of four groups. Each group was assigned a different intervention: either pure inulin or inulin-enriched milk chocolate, rice drink or shortbread. Volunteers provided baseline stool and urine samples and were asked to consume their products twice daily for the entire 10-days of the intervention. Volunteers then provided both stool and urine samples at completion. Changes in faecal microbial load and composition were analysed via fluorescence in situ hybridisation and 16S rRNA sequencing. Urine samples were analysed via 1H-NMR and SIMCA software. In addition, throughout the course of the intervention volunteers were asked to complete daily gastrointestinal sensation and bowel habit diaries, as well as dietary questionnaires. Gastrointestinal sensation and bowel habit data were collected using REDCap. Nutrient data was captured using the validated eNutri database. The eNutri database is validated food frequency questionnaire database designed to capture and analyse changes in diets over both short and long-term periods.
