This dataset contains the underlying experimental data for a human intervention trial investigating the effects of commercial cellobiose, oligofructose P95, and maltodextrin (placebo) on the gut microbiome community, metabolite changes, and gastrointestinal habits. The data supports the findings reported in the manuscript: 'Exploring the prebiotic potential of commercial cellobiose: In vivo approach of commercial cellobiose compared to placebo (maltodextrin) and fructooligosaccharides: a randomized, controlled trial'. This study is also presented as Chapter 5 of the PhD thesis: 'Extraction of cellobiose from spent coffee grounds and prebiotic potential of commercial cellobiose'.
