This dataset contains the raw experimental data. The study investigated the prebiotic potential of commercial cellobiose compared to oligofructose P95 (FOS) using a pH-controlled, batch in vitro human faecal fermentation model (n=3 donors). The data includes Short-Chain Fatty Acid (SCFA) concentrations, and bacterial population enumeration via Fluorescent In Situ Hybridization (FISH). The data supports the findings reported in the manuscript: 'Cellobiose as a candidate prebiotic: Enhanced butyrate production in an in vitro human gut fermentation model' This study is also presented as Chapter 5 of the PhD thesis: 'Extraction of cellobiose from spent coffee grounds and prebiotic potential of commercial cellobiose'. Outcomes include: • Bacteriology changes (Bacterial population enumeration via Fluorescent In Situ Hybridization (FISH) • Metabolite changes (Short-Chain Fatty Acids via Gas Chromatography with downstream Flame Ionization Detector (GC-FID).
